With Ramzan/Ramadan just around the corner, I thought I’ll share some Ramzan related recipes.. Most of our desi Iftar items have one thing in common, we eat them with chutneys.. all different types of them.. So I though I’ll share a few of my favorite ones.. I make them in a big batch to last for at least a week during Ramzan.064

Today, I made my batches of three of my favorite chutneys.. and sharing the recipes of them.. I don’t follow any fixed measurements, I  just keep tasting and adjusting according to my taste, but I will try to be as specific as I can..

  1. Green Chutney

GREEN CHUTNEY

What do I say about this chutney, that’s how mum made it.. and that is how I make it.. 🙂 . I love it with Pakoras!:)

This chutney serves as the base for two other variations of it..

  1. I use this chutney and mix with yogurt for the Green Raita, that goes with biryani and all..
  2. I mix this with the Imli Ki Chutney (scroll down for  therecipe) to go with the Desi BBQ items like tikka , seekh kababs etc.

I normally make a big batch of it and freeze it in small individual containers (you can use an ice cube tray as well).

   Ingredients:                             

  • 1/2 cup fresh Coriander Leaves
  • 1/2 cup fresh Mint Leaves
  • 4 Cloves of  Garlic
  • 1/2 tsp. Zeera (crushed)
  • 1/2 tsp. Salt
  • 1/4 cup Lemon Juice
  • 1/4 tsp. Red Chili Flakes
  • 1-2 Fresh Green Chili

Directions:

  1. Blend everything together . You may need to add a little water.Greenchutney
  2.  Adjust salt and  chili according to taste. Done!090

IMLI KI CHUTNEY (SWEET TAMARIND CHUTNEY)

IMLI CHUTNEY

I love this chutney with everything! I like it a bit sweet, but you can adjust according to your taste. I make a big batch and store it a jar, in the fridge.

Ingredients:

  • 1 cup Imli ( Tamarind ) Paste (soak the imli in hot water and squeeze the pulp out of it)
  • 1 big piece of Jaggery (Gurr, or you can use sugar too )
  • 1 tsp. Kaala Namak
  • 1 tsp. Chat Masala
  • 1/2 tsp. Red Chili Flakes
  • 1 tsp. Crushed Zeera (Cumin)
  • 1 inch piece of Ginger (or you can use 1/4 tsp. Ginger Powder)

Directions:

  1. Mix everything in a sauce pan and bring it to a boil. ImliChutney
  2. Adjust the spices according to your taste and cook it to a thick consistency.079

KHAJUR KI CHUTNEY

This is another favorite of mine .. and the taste reminds me of the ‘Imli Ki Candy’, I used to buy outside school and used to absolutely LUVE it!

Ingredients:

  • 1/2 cup Imli ( Tamarind ) Paste (soak the imli in hot water and squeeze the pulp out of it)
  • 250 gm. Date Paste (You can make your own by deseeding and softening the dates)
  • 1/2 tsp. Kaala Namak
  • 1 tsp. Chat Masala
  • 1 tsp. Red Chili Powder
  • 1/2 tsp. Bhuna Zeera Powder (Roasted Cumin)

Directions:

  1. Mix everything in a sauce pan and bring it to a boil.Datechutney

    Today i made green chutney wid pakoras at first ramzan. Me n my husband liked its taste so much. But 1/4 cup lemon juice was too much sour so i used little less. Tomorrow i’m going to try ur sooji besan halwa as dessert after iftar😊then i’ll tell u abt. Dat too. One thing i want to ask in date chatni, 250 grams is the weight of dates wid seeds or the wt. Of just the paste?plz tell

  2. Great! As I mentioned in the post .. I do all the chutney with no specific measurements.. so I tried to be as close to what I put and u can adjust it according to your taste.
    For the date chutney, I use the paste.. It was 1kg packet and I used approx. 1/4 of it.. but it totally depends on how sweet you like it.. I would say.. start from less and add as u taste and go! 🙂
