You know what my kids were craving, Subway Sandwiches.. so I just grilled some chicken, put some condiments and sauces together and my kids finished their dinner in record time!
I make grilled chicken in BBQ sauce because thats what my kids like, but I also any left over Roast chicken, or Chicken Tikka , or Roast Beef etc and cut them up into pieces to use as my meat for the sandwich. I am not a fan of the processed meats, but you could do that too.
Homemade Subway Sandwiches
Makes 4 Sandwiches
Ingredients:
- 2 Chicken Breasts
- 3-4 tbsp Barbecue Sauce
- 2 tsp Worcestershire Sauce
- Salt (to taste)
- 1 tbsp Oil
- 4 6-inch Bread Loafs
- 1 medium Onion ( sliced)
- 1 medium Tomato (sliced)
- 1 medium Capsicum (sliced)
- 1 Cucumber (sliced)
- Lettuce
- Corn
- Black Olives
- Cheese Slices
- Honey Mustard Sauce
- BBQ sauce
- Ketchup
- Mayonnaise
- Dijon Mustard
Method:
- Marinate the hammered chicken breast with BBQ sauce and Worcestershire Sauce for an hour or more.
- Grill the chicken in a bit of oil for about 15 minutes or till both sides are cooked. Let it rest for a few minutes and then cut them up into slices.
- Slice the bread in half and put cheese slices of your choice and then toast them in a preheated oven for 5 minutes. This toasts the bread and melts the cheese.
- Assemble the sandwiches . Put the meat over it and then add the condiments and sauces of your choice.
