There is no rocket science in making Egg salad sandwiches, and there are lots of variations of egg salad sandwiches, but you get used to the taste to your own childhood and this is how Ammi would make them.
Egg Salad Sandwiches
Makes 6 Sandwiches
- 6 Boiled Eggs (shredded or mashed with a fork )
- 2 tbsp Butter
- 2 tbsp Mayonnaise
- 1/2 tsp Dijon Mustard
- 1 tsp Salt (or to taste)
- 1/4 tsp Black Pepper Powder (freshly ground)
- 1 tbsp Spring Onions (chopped)
- 12 Bread Slices
Mix everything together, adjust according to taste.
Toast slices of bread and spread the egg mixture generously.
